Snow cake


Preparation

Beat 4 egg whites until firm.

Incorporate 150 g of sugar, 50 g of flour, the grated rind of a small lemon, 50 g of potato starch.
Add the mixture and add 50 g of melted butter.

The mixture is poured into a donut mold, buttered and floured on the bottom of which the sweet almonds have been placed.

Cook in a very moderate oven (about 150 ° C) for an hour, without ever opening the door.

Almonds are partly partly crushed left whole and also serve as a garnish.
