Ingredients:

450 g buckwheat flour
220 g white flour
450 g bitto cheese
1 small glass
mineral water
beer
salt, pepper, oil.

Prepare a batter with the two flours, grappa, mineral water and beer, obtaining a consistent and smooth mixture.

Cut the cheese into cubes and with the help of a spoon, pour the cubes first into the batter and then into the boiling oil.

Fry until complete browning.

Serve hot as an appetizer on a bed of songino.
