Spumone


Put 3 egg yolks in a mixer with 200 g of sugar and 2-3 tablespoons of milk and mix.
On the fire then put 30 cc of milk on low heat and when it is hot, the mixture is joined
of eggs and sugar, then 50 g of cocoa powder mixing well.
Whisk 4 egg whites with 25 g of icing sugar and add to the rest, allowing to cool.
The cocoa mixture is poured into an aluminum mold lined with greaseproof baking paper and placed in the freezer.

The vanilla layer is prepared, like the cocoa layer:
3 egg yolks, 200 g of sugar, 30 cc of milk, 1 sachet of vanillin, 1 tablespoon of witch (liqueur), 4 egg whites, 25 g of icing sugar and joins the cocoa mixture leveling it.

It should be cooled for at least 4 hours before it can be turned out.


Spumone is a semifreddo; it is a traditional dessert of  Salento (Puglia , Italy).
It usually comes in two overlapping layers of different flavors, creams or fruit.
