Pancakes from caliceddi (Sicily)
Ingredients:
4 eggs
cheese
1 bunch of caliceddis
salt
oil.
Clean the vegetables by recovering the florets, the tenderest leaves and the yellow flowers.
Wash and drain.
Beat the eggs with a pinch of salt and a tablespoon of crushed caciocavallo.
In a pan, heat a little oil, pour the mixture into tablespoons.
After about a minute turn the pancakes, cook them until they are golden.
Drain on absorbent paper and serve the still hot pancakes.
The caliceddi are a spontaneous grass that originates in volcanic soils, therefore abundant throughout the etna area.
