Meatballs with cheese


Ingredients for 4 people:

4-5 slices stale home-made bread
250 g whole milk
150 g pecorino romano
20 caciocavallo slices
6 eggs
peanut oil for frying
salt and pepper.

Soften the slices of stale bread in the milk and, after having squeezed them, place them in a container; add the eggs, the pecorino cheese, 10 slices of caciocavallo cut into squares, finely chopped parsley.

Work the mixture with your hands until it is smooth and leave to rest for about thirty minutes.

With the mixture, form medium-sized meatballs and fry them in the hot frying oil at 180° C.

Drain the excess frying oil on a paper towel and place the fried meatballs in a pan covered with the remaining caciocavallo slices.

Bake at 120° C for about half an hour, check salt and serve.

Bread is really a special food because even when it becomes stale, it is easy to use as an ingredient in many recipes.
