Maccheroni with ricotta (Maccaronis cum arrescottu - Sardinia)


Ingredients:

500 g maccheroni
300 g sheep ricotta
saffron
salt.

Boil the macaroni in plenty of salted water.

Meanwhile, melt the ricotta with a ladle of cooking water and add a pinch of powdered saffron.

Drain the macaroni and dress with this sauce.
