Eggs with vegetables
Doses for 4 people:
4 hard-boiled eggs
100 g carrots
100 g peas
1 leek
1 potato
1 lettuce salad
mayonnaise
1 zucchini
salt and pepper.
Boil all the vegetables.
Cut the eggs in half and remove the egg yolks.
Pour the peas into a dish and add the diced vegetables.
Reduce half of this mixture into mashed potatoes and mix it with the egg yolks.
Season with oil, salt and pepper.
Stuff the egg whites with the mixture and place them in a tray with the remaining vegetables around.
Cover everything with mayonnaise and season with oil and pepper.
